Easter Bunny Cookies

Spring is here! However, with Spring comes yet another holiday that revolves around food and candy. Luckily by incorporating YumEarth Easter candy into my kid’s Easter baskets and recipes, they can be included in all the festivities. Here is a delicious allergy friendly cookie recipe that can easily be transformed into festive Easter fun!

Ingredients:

Cookie:

  • 2 cups gluten free all-purpose flour (Note: I highly recommend Hungry Harry’s All-Purpose Flour Blend for this recipe)
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 3 tablespoons powdered sugar
  • 1/2 cup oil of choice
  • 1 egg replacer (or 1 egg, if safe), lightly beaten (Note: I highly recommend a flax egg as your replacement, but any egg replacer will work).
  • 1 teaspoon gluten-free vanilla extract (Note: I love Singing Dog Vanilla because they have a gluten-free & alcohol-free vanilla extract from a top 8 free facility).

Decorating:

  • Marshmallows (Note: I highly recommend Campfire Marshmallows (nut free facility) and are free from the top 9 allergens, and My Dandies for a vegan option).
  • YumEarth Easter Giggles or you can use their delicious new YumEarth Easter Jelly Beans
  • Sprinkles (for whiskers/eyes)
  • White Icing
  • Pink Icing Gel Writer

Instructions:

  1. Preheat oven to 350ºF.
  2. Combine all the dry ingredients into a bowl and whisk.
  3. Add the oil, egg replacer/egg, and vanilla. Mix to combine. The dough should be thick.
  4. Roll the dough out between two pieces of parchment paper until ¼ inch thick.
  5. Cut out your cookies with a circle cutter or simply just make a ball and flatten it to bake (that’s what I did)! These do not have to be perfect circles, just close enough!
  6. Bake for 5-7 minutes. Allow to cool completely, and then you’re ready to decorate!

Assembly:

  • Use a piping bag with the left-over icing for the tail, and ta-da!
  • To plate this, you can place it on top of brownie crumbles and use green sugar to make it look like dirt/grass! (Note: If you are looking for allergy safe brownie mixes to crumble, I love Safe + Fair or Partake because they are both delicious and top 9 free dedicated facilities!)

2. BUNNY COOKIES

Assembly:

  • Spread white store-bought icing on the cookie in an even layer.
  • Flatten the marshmallow in hand
  • Cut them into 3 pieces vertically and use these pieces to make the ears
  • Add a YumEarth Easter Giggle or use YumEarth Easter Jelly Beans for the nose & sprinkles for the eyes and whiskers
